ANSTO and the CSIRO Food Futures Flagship are currently seeking a recent PhD graduate with a strong focus on innovation, good communication skills and a proven publication record to join a unique research collaboration. We are looking for a researcher who can work well within small cross-disciplinary teams and can collaborate strongly with other research groups and interface with industrial partners.
The fellow will work in a major initiative applying a multidisciplinary approach to understand the factors that influence the material properties of proteins in dried foods and ingredients. Particular focus will be on relating the molecular properties of proteins to their behaviour during drying and re-hydration, initially in powder form and subsequently as components of whole foods. A range of proteins are already the subject of active study. Factors to be investigated will include moisture content, temperature, pH, ionic strength, protein size and composition and denaturation state. Subsequent study will relate to rheological behaviour and a determination of critical control points in yield stress, flow rate behaviour, reversibility of shear and elongational flow effects.
The fellow will interact closely with collaborators in Food Science Australia and The University of Queensland and will have the opportunity to publish their science in high impact journals and international conferences and to present their work directly to industry through a protein research consortium.
Experience in the application of X-ray or neutron scattering methods to investigate bio-systems, particularly proteins, is essential.
